Preheat the oven to 350°F. Grease a cupcake pan, or put 12 cupcake liners in the wells of a cupcake pan. Set aside.
In a mixing bowl add the melted butter and sugar and mix until combines. Add in the egg until incorporated, then mix in the vanilla. Add the cherry vanilla Coca-Cola to the mix and combine thoroughly. Whisk in the flour, baking powder and salt and whisk until the batter is smooth.
Fill cupcake pan wells each 2/3 full, then bake in the pre-heated oven for 18-22 minutes, until the cupcakes are golden and a toothpick inserted in the center of one cupcake comes out clean.
Frosting
In a small saucepan heat the cherry vanilla coke on medium heat until boiling, reduce the heat to low and simmer for 20-30 minutes until the liquid reduces by half. Chill the cherry vanilla coca-cola liquid in the fridge for about 15-20 minutes until it is cool.
In a mixing bowl beat the butter with an electric mixer on medium until it is fluffy (about a minute). Add in the coca-cola syrup, powdered sugar and milk and continue mixing until the mixture becomes frosting.
