Breakfast Tater Tot Casserole

This breakfast tater tot casseroles are so easy to make! While you can make tater tot casseroles for any kind of meal, this one is for breakfast. It is perfect for a weekend brunch, a holiday breakfast or even something you make and reheat for weekday breakfasts during the week. The eggs are fluffy and creamy, the tater tots are perfectly crispy, and everything is cheesy and delicious! I love making this whenever I am having family stay over with me, or I am attending a brunch.

Ingredients

Scale
  • 1 pound sausage (Can be pork, chicken, turkey or veggie. Your choice!)
  • 30 ounces frozen tater tots
  • 2 cups shredded cheddar cheese, divided
  • 8 eggs
  • 1 cup milk
  • 3 tablespoons hot sauce
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 ½ tablespoons chives, chopped

Instructions

  1. Preheat the oven to 350ºF. Spray a 9x13-inch baking dish with nonstick cooking spray. Set aside.
  2. In a large pan over medium-high heat cook the sausage according to the package instructions, breaking it apart as you cook it.
  3. Place the frozen tater tots, cooked sausage, and 1 ½ cups cheddar cheese in the baking dish, stir gently to combine.
  4. In a large bowl whisk together the eggs, milk, hot sauce, salt, pepper, garlic powder and chives together until well combined.
  5. Pour the egg mixture into the baking pan. Top everything with the remaining ½ cup cheddar cheese.
  6. Cover the dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and continue baking for another 20-30 minutes, until the top is golden brown and the eggs are set.
  7. Serve warm and enjoy!

Notes

  • Oven temperatures vary so keep an eye on the casserole, its done when the top is golden, puffs up, and the center is set. 
  • If you dont like sausage, you can swap it out for bacon, ham, or omit the meat completely
  • You can assemble this up to 12 hours before baking it and keep it in the fridge until you are ready to bake it
  • Store leftovers covered in the fridge for up to 3 days, or freeze for up to 3 months.
