A quick but delicious grilled cheese, loaded with blueberries, cheddar and goat cheese.

Ingredients

1 cup blueberries

2 tablespoons balsamic vinegar

3 tablespoons sugar

4 slices sourdough bread

4 slices cheddar

4 ounces crumbled goat cheese

Softened butter, to spread over bread

Instructions

  1. Heat blueberries, vinegar, and sugar in a saucepan over medium heat until the blueberries break down and the mixture resembles a thick paste (about 5 minutes).
  2. Spread a layer of blueberry spread onto one of the slices of bread.
  3. Add two slices of cheddar over the blueberry spread.
  4. Spread the goat cheese over the sliced cheddar
  5. Place another bread slice over the goat cheese.
  6. Spread softened butter over both the top and bottom of the sandwich.
  7. Heat a skillet over medium heat and cook sandwich on each side for 2-3 minutes, or until cheese is melty.
  8. Cut sandwich in half and serve hot.
