What do I need to make these Cherry Chocolate Blondies?

You don't need a lot of ingredients for these chocolate cherry bars. In fact, you probably have most of these in your pantry already. You will need:

  • Unsalted butter 
  • Light brown sugar,
  • Granulated sugar
  • Egg
  • Vanilla extract
  • All-purpose flour
  • Salt- you can leave this out if you use salted butter
  • Baking powder
  • Cherries- fresh or frozen (more on that below)
  • Semi-sweet chocolate chips- if you would prefer other chocolate chips these can easily be swapped out. Try milk chocolate chips, dark chocolate chips or white chocolate chips!

Can I use fresh or frozen cherries in these cherry blondies?

Yes! You can use either fresh or frozen cherries in these blondies. Fresh cherries are great for when cherries are in season and available everywhere. But frozen cherries are available year round and will also work great in these. For fresh cherries, make sure you pit and chop the cherries into quarters before adding them to the batter. For frozen cherries, thaw the cherries and drain any excess liquid to prevent the batter from becoming too watery. You could also use canned cherries in this (not cherry pie filling, just canned cherries), as long as you make sure you drain and dry the cherries first.

Can this recipe be doubled?

You can double the batter for this recipe and bake it in a 9x13-inch pan.

How can I store these chocolate cherry blondies?

These blondies can be stored in an airtight container at room temperature for up to 5 days. You can also freeze them for up to 3 months. To freeze them, make sure they are cooled completely before slicing them, wrapping them in plastic wrap and then storing them in an airtight container or freezer bag, and thaw them before eating.

Buttery blondies filled with chocolate chips and chunks of fresh cherries

Ingredients

½ cup unsalted butter, melted

½ cup light brown sugar, packed

½ cup granulated sugar

1 large egg

2 teaspoons vanilla extract

1 cup and 1 tablespoon all-purpose flour, divided

¼ teaspoon salt

½ teaspoon baking powder

1 cup cherries, fresh or frozen cut into ¼s

1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350F. Line an 8-by-8-inch pan with parchment paper, set aside.
  2. In a large bowl combine the melted butter, brown sugar and granulated sugar until smooth.
  3.  Add the egg and vanilla extract and stir to combine.
  4. Add the 1 cup flour, salt, and baking powder and stir until just combined, taking care not to over mix.
  5. In a small bowl combine the remaining 1 tablespoon flour and cherries. 
  6. Fold the cherries and chocolate chips into the batter until combined. 
  7. Spread batter evenly into the prepared pan. 
  8. Bake in the preheated oven for 25 to 30 minutes, or until edges begin to slightly pull away from sides of pan and center is set.
  9. Allow bars to cool for at least 1 hour before slicing and serving. Bars can be stored in an airtight container at room temperature or in the refrigerator for up to 1 week or frozen for up to 3 months.
