A light, delicious apple cake that can be made in 1 bowl.
1 cup All-purpose Flour
1/2 cup and 1 tablespoon granulated sugar, divided
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, melted and cooled
2 teaspoons vanilla extract
2 large eggs
2 tablespoons rum (or 1 teaspoon rum extract)
2 Granny Smith Apples, peeled, cored and diced
Preheat the oven to 350 degrees F. Spray a 9-inch springform pan with nonstick cooking spray, set aside. (you can also line the bottom of the pan with parchment paper for extra easy removal from the pan)
In a large bowl whisk together flour, 1/2 cup sugar, baking powder, and salt until combined.
Add the melted butter, vanilla extract, eggs and rum to the bowl and mix until just incorporated and no streaks of flour remain.
Fold the diced apple into the batter.
Spread the batter into the bottom of the prepared springform pan.
Sprinkle the remaining tablespoon of sugar over the top of the cake batter.
Bake in the preheated oven for 35-40 minutes until the cake is golden and a toothpick inserted into the center comes out clean.
