Ingredients

Units Scale

6 cups fresh plums, pitted and diced

3/4 cup brown sugar

1 tablespoon brandy

1/2 teaspoon cinnamon

1/4 teaspoon ginger

1 teaspoon vanilla extract

1 tablespoon cornstarch

For the topping:

1 and 1/2 cups all-purpose flour (spooned & leveled)

1/3 cup granulated sugar

1 and 1/2 teaspoons baking powder

1/4 teaspoon salt

6 Tablespoons unsalted butter, cold and cubed

1/2 cup whole milk

coarse sugar, optional

Instructions

  1. Preheat the oven to 350°F (177°C).
  2. In a large bowl, combine the diced plums, sugar, brandy, cinnamon, ginger, vanilla extract, and cornstarch. Mix well until the plums are evenly coated.
  3. Spread the plum mixture into the bottom of a 9-inch cast iron skillet or baking dish. Set aside.
  4. Whisk the flour, sugar, baking powder, and salt together in a large bowl.
  5. Use a pastry cutter, two forks, or a food processor to cut the butter into the mixture until it is pea-sized crumbs.
  6. Add in the milk and mix until evenly combined.
  7. Spoon the dough over the top of the plum filling, spreading it slightly to cover most of the fruit. Sprinkle with coarse sugar if using.
  8. Place the skillet in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbly.
  9. Allow the cobbler to cool for at least 15 minutes before serving. Serve warm, topped with vanilla ice cream or whipped cream if desired.
