Easiest Sweet Potato Pie Recipe

This sweet potato pie recipe is so easy! You could make it for a special occasion, or any time you want a quick slice of pie.

Ingredients

1 (9 inch) unbaked pie crust

1 can sweet potato puree

1 cup brown sugar

1/4 cup orange juice

1 tablespoon maple syrup

1/4 cup heavy cream

2 eggs

1 teaspoon vanilla extract

1 teaspoons pumpkin pie spice

4 tbsp melted butter, cooled

1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F.
  2. Prick the bottom and sides of the crust with a fork. Add a piece of parchment paper on top of the crust and place pie weights (or dry beans) on top.
  3. Bake the crust in the preheated oven for 15 minutes. Remove the crust from the oven and let it cool, remove the pie weights and parchment.
  4. In a large bowl whisk together the sweet potato puree, brown sugar, orange juice, maple syrup, heavy cream, eggs, vanilla extract, pumpkin pie spice, melted butter, and salt until combined and smooth.
  5. Pour the sweet potato pie filling into the crust. Add a foil ring around the edges of the crust to prevent the crust from over-browning.
  6. Bake in the preheated oven for 50-55 minutes, until the pie is mostly set and the center only has a slight jiggle when you shake the pan.
