A simple recipe that will give you fresh Irish Soda Bread in less than an hour

Ingredients

4 cups all-purpose flour

1 teaspoon baking soda

1 1/2 teaspoons salt

2 cups buttermilk

1 egg

2 tablespoons melted butter, plus more for the pan

1 cup raisins (optional)

Instructions

  1. Preheat the oven to 400 F.
  2. In a large bowl, whisk together the all-purpose flour, baking soda, and salt.
  3. In a small bowl whisk together the buttermilk, egg, and melted butter.
  4. Stir the wet ingredients into the bowl with the dry ingredients with a rubber spatula until combined.
  5. Mix the raisins into the dough if you are using them.
  6. Use your hands to lightly knead the dough and shape it into a ball.
  7. Brush the bottom of a 9 or 10-inch cast iron skillet with some additional melted butter, then place the dough in the skillet.
  8. Use a knife to cut an X into the top of the dough.
  9. Bake the bread for 35-40 minutes, until it is golden and the bottom of the bread sounds hollow when tapped.
  10. Allow the bread to cool completely, then  serve. Store in an airtight container at room temperature for up to 4 days or freeze for up to 3 months.
