This easy strawberry icebox cake is a delicious, no-bake dessert that impresses with minimal effort and maximum flavor.

Ingredients

3 cups heavy cream

1/2 cup sweetened condensed milk

1 teaspoon vanilla extract

2 packs graham crackers or about 40 Nilla wafers

2 cups sliced fresh strawberries

Instructions

  1. Add the heavy cream to a large bowl and use a stand mixer or an electric mixer to whip until soft peaks form. 
  2. Mix in the sweetened condensed milk and vanilla extract and continue whipping until stiff peaks form.
  3. Lay graham crackers or Nilla wafers into the bottom of an 8x8-inch baking dish.
  4. Top with a layer of the whipped cream mixture.
  5. Layer sliced fresh strawberries on top of the whipped cream.  Repeat the layers 2 more times so there are 3 layers of everything. 
  6. Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or overnight for a softer texture
  7. Cut and serve
