A super easy cake mix cookie recipe that uses boxed cake mix and the frosting of your choice for a fun treat.
1 box (15.25 oz) chocolate cake mix (devil’s food, triple chocolate, etc.)
2 large eggs
1/3 cup vegetable oil (or melted butter)
1 teaspoon vanilla extract
Granulated sugar to roll the cookies in (about 1 cup)
1 cup frosting of choice (store-bought or homemade)
Preheat your oven to 350°F and line baking sheets with parchment paper.
Mix the dough: In a large bowl, stir together the cake mix, eggs, vanilla extract and oil until fully combined. Dough will be thick.
Scoop and bake: Scoop out tablespoon-sized balls of dough, roll them in the granulated sugar, then place them onto your prepared baking sheets, spacing them about 2 inches apart. Bake for 8–10 minutes, until the edges are set but centers still look soft.
Cool: Let cookies sit on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Fill and sandwich: Once cool, pair cookies by size. Spread or pipe frosting on the flat side of one cookie, then press another cookie on top to make a sandwich.
Optional: Roll the frosted edges in sprinkles, crushed cookies, or mini chocolate chips for a fun finish.
