This mixed berry cobbler is the perfect easy dessert for any time of year. Made with frozen berries, a little sugar, and a simple cinnamon-spiced topping, it comes together fast and bakes into a fruit-filled treat with a soft, golden crust. It’s great on its own or with a scoop of vanilla ice cream.

Ingredients

For the berry filling:

3 cups frozen mixed berries

⅓ cup granulated sugar

1 tablespoon cornstarch

1 tablespoon lemon juice

For the topping:

1 cup all-purpose flour

¼ cup brown sugar

¼ cup granulated sugar

1½ teaspoons baking powder

¼ teaspoon salt

½ teaspoon cinnamon

½ cup milk

6 tablespoons melted butter

Instructions

  1. Preheat your oven to 375°F and lightly grease a 10-inch cast iron skillet or baking dish
  2. In a medium bowl, toss the frozen berries with the granulated sugar, cornstarch, and lemon juice. Pour the mixture into the prepared baking dish.
  3. In another bowl, stir together the flour, brown sugar, granulated sugar, baking powder, salt, and cinnamon.
  4. Add the milk and melted butter to the dry ingredients and mix until just combined.
  5. Spoon the topping over the berries. It’s okay if some berries are still peeking through.
  6. Bake for 40 to 45 minutes, or until the topping is golden and the filling is bubbling around the edges.
  7. Let cool slightly before serving. Great warm or at room temperature.
