Chocolate Stout Cheesecake Bars

A slice of chocolate stout cheesecake bars

Rich chocolate cheesecake bars made with a dry Irish stout such as Guinness over an Oreo crust and topped with smooth chocolate ganache.

Crust:

24 Oreo cookies

5 tablespoons unsalted butter, melted

Filling:

16 ounces cream cheese, softened

3/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup dry Irish stout such as Guinness

3/4 cup semi sweet chocolate, melted

2 tablespoons unsweetened cocoa powder

1/4 teaspoon salt

Ganache:

4 ounces semi sweet chocolate, chopped

1/2 cup heavy cream

Instructions

  1. Preheat oven to 325°F. Line an 8x8-inch pan with parchment paper.

  2. Pulse Oreos into fine crumbs. Mix with melted butter and press into pan. Bake 8 minutes and cool slightly.

  3. Beat cream cheese and sugar until smooth. Add eggs one at a time. Mix in vanilla, stout, melted chocolate, cocoa powder, and salt until smooth.

  4. Pour over crust and bake 35 to 40 minutes until center is slightly jiggly. Cool, then refrigerate at least 4 hours.

  5. Heat cream until simmering and pour over chopped chocolate. Let sit 2 minutes, then stir until smooth. Spread over chilled cheesecake. Chill until set.

  6. Slice and serve.

Notes

  • Make sure your cream cheese is fully softened to prevent lumps.
  • Do not overmix once the eggs are added.
  • For a slightly stronger stout flavor, simmer the ½ cup stout for 5 to 7 minutes to reduce slightly, then cool completely before adding.
  • For clean slices, use a sharp knife and wipe it clean between cuts.
