I've been really focused on more savory dishes lately, especially vegetarian ones. And as long as you choose a fish-sauce free curry paste for this recipe, it is a fully vegetarian dinner recipe. This dish is a perfect blend of sweet, spicy, and savory notes that will transport you to a world of vibrant flavors. At the heart of this curry are tender chunks of sweet potato, perfectly cooked until they melt in your mouth, complemented by an array of fresh spinach, hearty chickpeas, and fragrant herbs. Every kind of curry paste will have a different flavor, so if you would rather try a green or yellow curry paste then go for it. You could also make your own curry paste at home if that is your preference.

How can I serve this Sweet Potato Chickpea Curry?

The most classic option to serve with curry is rice, which is what I suggest here. You can use Basmati rice for a traditional option, try brown rice for a healthier, fiber-rich option, or coconut rice for a sweeter experience. Instead of rice you could serve this with something like quinoa. You can also serve this curry with different flatbreads like Naan or Roti.

An easy vegetarian curry recipe that combines sweet potatoes, chickpeas and spinach for a delicious dinner.

Ingredients

Scale

1 tablespoon oil

1 cup onions, diced

2 cups peeled and cubed sweet potatoes

2 garlic cloves, minced

2 tablespoons red curry paste

1 14-ounce can regular coconut milk

½ cup water

1 cup canned chickpeas

1 tablespoon lime juice

3 cups fresh baby spinach

1 tablespoon chopped cilantro (optional for serving)

Instructions

  1. Heat the oil over medium high heat.
  2. Add the onions and cook until soft (about 10 minutes)
  3. Add the sweet potatoes and garlic and stir to coat with oil.
  4. Add the curry paste and stir until the sweet potato mixture is coated with curry paste.
  5. Add the coconut milk and water and stir to combine.
  6. Simmer over low heat for 10-15 minutes until the broth is thickened and the sweet potatoes are soft.
  7. Stir in the spinach and cook until wilted.
  8. Serve hot with rice, sprinkle with cilantro if desired.
