Everyone who knows me knows that I absolutely love Mexican food. I could eat it every single day. And one of the things that my favorite local Mexican restaurant serves is these fried banana desserts that I always love to get. That is one of the things that inspired this recipe, the other is my love for empanadas in general. These banana empanadas are just the treat you need because they are so simple and easy to make! With only a handful of ingredients and minimal prep time, this recipe delivers maximum flavor with minimal effort. Whether you're a seasoned baker or a beginner, you'll love how simple it is to whip up these dessert empanadas in no time. The combination of sweet bananas and rich caramel, wrapped in a golden, flaky crust, is pure comfort food. Plus, using store-bought empanada dough means less time in the kitchen and more time enjoying these delightful treats! These are baked rather than fried, which makes them even easier to make, but if you want to fry them there are directions below to do that as well!

How to Make Easy Caramel Banana Empanadas

  1. Prepare your baking sheets: Start by lining two baking sheets with parchment paper.
  2. Prepare the Filling: Cut the bananas up into slices, coat the banana slices in the sugar, then add them to nonstick frying pan and cook on medium-high heat for 4-5 minutes on the first side and 1 minute on the second side. Remove to a plate and let cool.
  3. Assemble the Empanadas: Roll out the store-bought empanada dough and cut into circles if needed. 1-2 tablespoons of filling into the center of each circle. Be careful not to overfill.
  4. Drizzle caramel sauce over banana filling.
  5. Seal the Edges: Lightly brush the edges of the dough with water, fold it over the filling, and press firmly to seal. Use a fork to crimp the edges or roll the edges over to seal completely. Chill the empanadas in the fridge for 30 minutes.

These easy banana empanadas are a perfect dessert

Ingredients

½ cup granulated sugar

4 large bananas, sliced

1 package empanada pastry dough (12 count)

¼ cup caramel sauce

1 egg

1 tablespoon water

Coarse sugar, for sprinkling

Instructions

  1. Spread the granulated sugar onto a plate.
  2. Roll the bananas in the sugar until they are coated.
  3. Spray a nonstick pan with cooking spray and heat over medium-high heat.
  4. Add the bananas and cook until golden brown on the bottom (4-5 minutes).
  5. Flip the bananas and continue cooking for another minute until the other side is brown.
  6. Transfer the cooked bananas to a separate plate to cool.
  7. Line 2 baking sheets with parchment paper.
  8. Place 6 empanada doughs on each baking sheet.
  9. Place 1-2 tablespoons of banana filling in the center of each dough.
  10. Drizzle caramel syrup evenly over the banana filling.
  11. Dip your finger into a small bowl of water and moisten the top outer rim of each dough disc.
  12. Fold each dough disc in half to cover over the filling, then press the edges of the dough together to seal the edges. Use a fork to crimp the edges or roll the edges up to completely seal. Refrigerate the empanada dough for at least 30 minutes before baking.
  13. Preheat the oven to 375 F.
  14. Whisk together the egg and water to make an egg wash.
  15. Brush the top of each empanada with the egg wash, and then sprinkle with coarse sugar if desired.
  16. Bake the empanadas for 18 to 20 minutes, until they are golden brown.
  17. Let cool, then serve.
