Peanut Butter Blondies

If there's one thing you should know about me, it's that I have a deep and very real love for peanut butter. I'll happily eat it straight from the jar with a spoon, spread it thick on toast, or swirl it into just about any dessert. And when you combine peanut butter with chocolate? Forget it, I'm sold! That's why these peanut butter blondies are such a dream dessert for me.

They're everything you want in a blondie: chewy, fudgy, and rich. The brown sugar gives them that warm, caramel-like sweetness, while the peanut butter makes them extra soft and flavorful. And because I can never leave well enough alone, I loaded them with both peanut butter chips and chocolate chips. Every single bite is a chocolate peanut butter lover's fantasy.

These peanut butter chocolate chip blondies also happen to be ridiculously easy to make. No mixer needed, just a bowl, a whisk, and about 10 minutes to stir everything together before baking. They're the kind of dessert that looks simple but disappears fast at potlucks, bake sales, or honestly just on your kitchen counter when you're "taste testing" one square after another.

What Are Blondies?

Blondies are basically the vanilla cousin of brownies. Instead of cocoa powder, they're made with brown sugar, butter, and vanilla, which gives them a chewy, fudgy texture and a butterscotch-like flavor. Think of them as a cross between a cookie bar and a brownie. The beauty of blondies is how versatile they are. You can mix in chocolate chips, nuts, candies, or in this case, lots of peanut butter. These peanut butter blondies are like the ultimate upgrade on the classic blondie recipe.

Ingredients You'll Need

  • Butter - Melted butter makes these blondies rich and gives them that chewy texture.
  • Brown sugar - Adds sweetness and a subtle caramel flavor that pairs beautifully with peanut butter.
  • Peanut butter - Creamy is best here, so it mixes smoothly into the batter.
  • Eggs - Help bind everything together and add structure.
  • Vanilla extract - A splash for warmth and flavor.
  • All-purpose flour - The base of the blondies.
  • Baking powder + baking soda - A little lift so they're not too dense.
  • Salt - Just enough to balance the sweetness and bring out the peanut butter flavor.
  • Peanut butter chips - For extra peanut buttery goodness.
  • Chocolate chips - Because peanut butter + chocolate is one of life's best pairings.

How to Make Peanut Butter Blondies

  1. Prep your pan - Preheat the oven and line an 8x8 pan with parchment paper so the blondies come out easily.
  2. Mix wet ingredients - Whisk together melted butter, brown sugar, and peanut butter until smooth, then add the eggs and vanilla.
  3. Add dry ingredients - Stir in the flour, baking powder, baking soda, and salt until just combined.
  4. Fold in the chips - Peanut butter chips and chocolate chips go right into the batter.
  5. Bake - Spread evenly into the pan and bake until the edges are set but the middle is still slightly soft.
  6. Cool & slice - Let them cool before cutting into squares (if you can wait that long!).

FAQs

Can I use crunchy peanut butter instead of creamy?
Yes! Crunchy peanut butter will add little bits of peanut crunch throughout the blondies. Just note that it might make the batter a bit harder to stir together.

Do I have to use both peanut butter chips and chocolate chips?
Not at all. If you only have one or the other, go with what you've got. They'll still be amazing. Or try mixing in white chocolate chips, chopped Reese's cups, or even M&Ms.

How do I store these blondies?
Keep them in an airtight container at room temperature for up to 4 days. They also freeze well, just wrap tightly and freeze for up to 2 months. Thaw at room temp before serving.

Can I double the recipe?
Absolutely! Bake in a 9x13-inch pan and extend the bake time slightly (usually 35-40 minutes).

Ingredients

½ cup (1 stick) unsalted butter, melted

1 cup light brown sugar, packed

½ cup creamy peanut butter

2 large eggs

2 tsp vanilla extract

1 cup all-purpose flour

½ tsp baking powder

¼ tsp baking soda

¼ tsp salt

½ cup peanut butter chips

½ cup semisweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8x8-inch baking pan with parchment paper.
  2. In a large mixing bowl, whisk together the melted butter, brown sugar, and peanut butter until smooth.
  3. Add the eggs and vanilla and whisk until combined.
  4. In a separate bowl, whisk the flour, baking powder, baking soda, and salt. Stir the dry mixture into the wet ingredients just until combined.
  5. Fold in the peanut butter chips and chocolate chips.
  6. Spread the batter evenly into the prepared pan. Bake for 28-32 minutes, or until the edges are set and a toothpick inserted in the center comes out with a few moist crumbs.
  7. Let the blondies cool completely in the pan before cutting into squares.

Notes

  • Want extra indulgence? Sprinkle a few extra chips on top of the batter before baking.
  • For a caramel twist, drizzle some caramel sauce over the cooled blondies.
  • These are best slightly underbaked for that chewy, fudgy center.
