Peanut Butter Blondies

These chewy, fudgy peanut butter blondies are packed with peanut butter flavor and loaded with peanut butter chips and chocolate chips. Sweet, rich, and super easy to make, these peanut butter chocolate chip blondies are the ultimate dessert for anyone who can’t resist the peanut butter + chocolate combo.

1/2 cup (1 stick) unsalted butter, melted

1 cup light brown sugar, packed

1/2 cup creamy peanut butter

2 large eggs

2 tsp vanilla extract

1 cup all-purpose flour

1/2 tsp baking powder

1/4 tsp baking soda

1/4 tsp salt

1/2 cup peanut butter chips

1/2 cup semisweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8x8-inch baking pan with parchment paper.
  2. In a large mixing bowl, whisk together the melted butter, brown sugar, and peanut butter until smooth.
  3. Add the eggs and vanilla and whisk until combined.
  4. In a separate bowl, whisk the flour, baking powder, baking soda, and salt. Stir the dry mixture into the wet ingredients just until combined.
  5. Fold in the peanut butter chips and chocolate chips.
  6. Spread the batter evenly into the prepared pan. Bake for 28–32 minutes, or until the edges are set and a toothpick inserted in the center comes out with a few moist crumbs.
  7. Let the blondies cool completely in the pan before cutting into squares.

Notes

  • Want extra indulgence? Sprinkle a few extra chips on top of the batter before baking.
  • For a caramel twist, drizzle some caramel sauce over the cooled blondies.
  • These are best slightly underbaked for that chewy, fudgy center.
