1/2cupunsalted butter, softened
1/2cuptahini, well stirred
3/4cupbrown sugar
1/4cupgranulated sugar
1 large egg
1 teaspoon vanilla extract
1 1/2cupsall-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
1cupdark chocolate chunks or chips
Flaky sea salt, for topping
Instructions
In a large bowl, cream together the butter, tahini, brown sugar, and granulated sugar until smooth and creamy.
Add the egg and vanilla extract, mixing until fully combined.
Stir in the flour, baking soda, and salt until just combined. Do not overmix.
Fold in the dark chocolate.
Cover and chill the dough for at least 1 hour.
Preheat the oven to 350°F and line a baking sheet with parchment paper.
Scoop the dough into 2 tablespoon-sized balls and place them on the baking sheet.
Bake for 10–12 minutes, until the edges are set and the centers are still soft.
Sprinkle with flaky sea salt immediately after baking.
