Instructions
Preheat oven to 350°F. Line an 8x8-inch baking pan with parchment paper.
In a large bowl, whisk together the olive oil and sugar until smooth and glossy.
Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
Add the cocoa powder, flour, salt, and espresso powder (if using). Mix until just combined.
Fold in the dark chocolate.
