Ingredients

3 Tablespoons salted butter

¼ cup pumpkin puree

1 10 oz. bag marshmallows

¼ teaspoon vanilla extract

1 teaspoon pumpkin pie spice

6 cups crispy rice cereal

2 oz. white chocolate chips or candy melts, melted, optional

Instructions

  1. Line a 9×9-inch baking pan with parchment paper or foil and lightly grease with nonstick cooking spray.  Set aside.
  2. Melt the butter in a very large pot or Dutch oven over medium heat. Once melted, stir the butter continuously while you continue cooking it for another 5-8 minutes until the butter is golden and smells nutty.
  3. Immediately add the pumpkin puree and marshmallows. Stir the mixture with a rubber spatula until the marshmallows are completely melted.
  4. Remove from the heat and add in the vanilla extract and pumpkin pie spice and stir until combined. Let cool for 15 minutes.
  5. Add in the crispy rice cereal and stir until fully combined.
  6. Use a buttered spatula or wax paper to evenly press mixture the prepared pan. Let sit at room temperature to set for at least an hour.
  7. Cut into squares and serve.
