Blue Ribbon Double Chocolate Banana Muffins

These muffins won me blue ribbons at both the county fair and the state fair.

  • Prep Time: 15 minutes
  • Cook Time: 25 minutes
  • Total Time: 40 minutes
  • Yield: 12 muffins 1x

Ingredients

Units Scale
  • ½ cup butter
  • ½ cup brown sugar
  • ¼ cup white sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 3 medium bananas (mashed)
  • ¼ cup sour cream
  • 1 cup all purpose flour
  • ½ cup cocoa powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Spray muffin pan with non-stick spray or put muffin liners in each cup.
  2. Add the butter and sugars to a mixing bowl and mix until well combined.
  3. Beat in the egg, vanilla, banana, and sour cream.
  4. Stir in the flour, cocoa powder, baking soda, and salt.
  5. Stir in the chocolate chips until just combined
  6. Fill each muffin cup two-thirds full. Sprinkle the tops with additional chocolate chips if desired.
  7. Bake for 20-25 mins, until risen, firm to the touch and a toothpick inserted in the middle comes out clean. 
  8. Let cool completely before serving.
